Wild Boar Meatballs

If you are lucky enough to have the possibility to get yourself some wild boar…then get some!

It tastes delicious…definitely a different flavor than pork, has a much more beautiful and deeper color than pork, and I find it in minced form being much easier to work with than pork.
I heard somewhere it only takes one generation for runaway domesticated pigs to be become wild boars again, so if naturally living domesticated pigs are paleo, wild boar must be paleo deluxe? ;)

When making meatballs, you could flavor them with pretty much anything that you prefer…chopped onions, parsley or any other fresh or dried herb, minced garlic, Dijon mustard and so on.
…here’s how I did this time:

Awesome meatballs!

What you need:

  • 1lb (900 g) minced wild boar
  • 3 teaspoons dried thyme
  • 1.5 teaspoons onion powder
  • 0.5 teaspoon minced garlic
  • 0.5 teaspoon ground allspice
  • 0.5 teaspoon ground white pepper
  • 0.25 teaspoon salt
  • 1 teaspoon butter, clarified butter or ghee
  • (+ butter, clarified butter or ghee for frying)

Optional

  • 3 teaspoons full fat cream

What to do:

1Put the meat in a bowl.
2Put the rest of the ingredients in a small pot, bring to a gentle boil and let simmer for a few minutes, then pour it over the meat.
(Skip if omitting the Cream and add directly to the meat.)
3Mix it all thoroughly using you hands, and let stand for a while if you have the time.
4Roll the meat mixture into balls (about the size of golf balls) while letting a frying pan heat up.
5Fry the meatballs in butter or ghee over medium-high heat until they’ve got a nice color and are cooked through.

Notes:

Use clarified butter or ghee and exclude the cream for Whole30 compliance.

 

Done, eat and enjoy. :)

  1. I’m insanely jealous, how did you get your hands on wild board meat? :) Great recipe!

    • The dude I buy my eggs from shot it (and had a veterinarian check it and green light it from deceases).
      I also just found out that the place where he had it butchered (you can’t just do it yourself here if you intend to sell it…anal laws and regulations deluxe :/) buy game meat including wild boar from local hunters and re-sell..awsome!
      (that’s about 30 miles from where I live..)
      Wild boar is not uncommon around here (honestly…I’m writing this in the car on the way home from my sisters birthday celebrations, and on the way there I saw a run over wild boar on the side of the road) but I never had any right around the house (luckily, aggressive creatures…), deers and mooses are a quite common sight in the back yard though.
