Slow cooker pork stew

Some kind of meat, bacon, root vegetables, herbs, red wine, Dijon mustard, bay leaves….these are all ingredients that often goes into my stews.
There is something about that combination of flavors that is very comforting to me, and with not much effort you can have a delicious dish ready that you can serve pretty much any day!

Cooking it in a slow cooker also makes it possible to have it on weeknights, just prep the ingredients the night before and then throw them in the slow cooker before you go to work…not much beats coming home after a long day to a house that smells wonderful and all you have to do is to pull out a few plates and dig in.

If you’ve been paying attention, you might be thinking “Heeey, wait a minute…two pork stew recipes in a row??”
Yes, my I know the previous recipe also was for a pork stew and no, that’s not all I eat…it just happened to turn out that way.
(This pork stew is very different from the previous one though, both in flavor and looks.)

Anyway, here’s what to do if you want to give it a shot:

A flavor packed pork stew made in a slow cooker!

What you need:

  • 2.2lb (1 kg) pork (such as ham or tenderloin), (cubed)
  • 5oz (140 g) bacon (slices, cut into squares)
  • 4 carrots (peeled and cut into chunks)
  • 5 parsnips (peeled and cut into chunks)
  • 2 onions (peeled and cut into chunks)
  • 4 cloves garlic (minced)
  • 0.5 tablespoon dried rosemary
  • 1 tablespoon dried thyme
  • 0.5 tablespoon pink peppercorns
  • 1 teaspoon salt
  • 1 tablespoon Dijon mustard
  • 3 tablespoons tomato paste
  • 1 cup (2.5 dl) red wine
  • 3 bay leaves
  • 1-2 tablespoon arrowroot powder
  • salt and ground white pepper (to taste)

What to do:

1Put the rosemary, thyme, peppercorns, and salt in a mortar and grind until the peppercorns are crushed.
2Put the bacon in a large frying pan, and fry for a few minutes.
3Add the chunks of carrot, parsnip, onion and the minced garlic to the frying pan.
Dust with a bit of salt and ground white pepper, and let fry for some 5 minutes while tossing occasionally.
4Transfer the bacon and vegetables to your slow cooker, and add the Dijon mustard, tomato paste and bay leaves.
5Put the cubed pork in the hot frying pan along with the spices from the mortar, and quickly sear the meat before placing it on top of the vegetables in the slow cooker.
6Pour over the wine, and set it to low for 6-7 hours.
7When it's done, dissolve the arrowroot powder in a little bit of cold water and gently stir it into the stew to thicken it.
