Indian Inspired Chicken Stew

So…here we go, THE FIRST POST! And…something has to be the first post, so why not something that I think will dominate the type of posts put on this blog…: Today’s Dinner.

Indian Inspired Chicken Stew

Quick, easy, and lots of flavor!

What you need:

  • 4-5 chicken breasts (cut in bite size pieces)
  • 3 onions (peeled, halved and sliced)
  • 1 red bell pepper (de-seeded and diced)
  • 3-4 cloves of garlic (minced)
  • 1 red chili (de-seeded and finely chopped)
  • 1-1.4oz (30-40 g) Garam Masala spice blend
  • 2 limes (juice)
  • 1 handful cashews
  • 1 can coconut milk
  • 1 can crushed tomatoes
  • coconut oil (for frying)

What to do:

1Add everything for but the coconut milk, crushed tomatoes and cashews to a large hot frying pan, and fry in coconut oil until the chicken is done.
2Pour everything over into a pot and add the coconut milk, tomatoes and cashews.
3Let simmer on low heat for a little while.
4Serve with cauliflower rice.

  2. Looks great! I had a real hard time writing down recipes when I first started out. Now I’m a pro at eyeballing my ingredients and figuring out their measurements – be sure to take notes while cooking! :)

  3. I made this tonight with some modification:
    -Whole milk for coconut milk (couldn’t find any good brands of coconut milk at the store)
    -real rice instead of cauliflower (cooked in homemade chicken stock instead of water)
    -some random farmer’s market hot pepper, not a red chili

    It was really good, and I may do it again sometime.
