Virgin Colada Refreshers


Looking for that island feeling this summer? Just whip this delicious refresher up in no time, put on some reggae, close your eyes, relax, take a sip and you got it!

I have absolutely nothing to complain about when it comes to this year’s summer (which is a life saver considering real summer was pretty much non-existent the last two years here in Sweden!).
The last month has been nothing less than awesome, with clear blue skies and temperatures around 90F (32C) most of the time.
Days like that it’s nice with something refreshing in the afternoon heat, and what could possibly fit the season more than a delicious, creamy, rich and frothy Piña Colada?
(And this two-ingredient version is free from dairy, added sugars and alcohol…)

I’ve made this drink on a few occasions this summer, and it’s been spot on every time!

Here’s what to do:

Virgin Colada Refreshers

Get that island feeling in less than 10 minutes!

What you need:

  • 1 pineapple
  • 1.5 cups (3.5 dl) extra creamy coconut milk
  • ice cubes

What to do:

1Peel the pineapple, cut it in quarts lengthwise, remove the woody core, and dice it.
2Put the dices in a blender, and run until smooth.
3Add the coconut milk and a few ice cubes, and run a bit more.
4Put a few ice cubes in your glass of choice and fill up.
