Boiled Meat, Day 1: “Pepparrotskött”


Today’s dish is a traditional Swedish dish, with a low-carb twist.
Traditionally it’s thickened with wheat flour and served with potatoes…instead I thicken it with cream cheese and serve it with roasted broccoli and bell peppers.

Pre-Boiled Beef

A batch of pre-boiled beef to use for other recipes...

What you need:

  • 2-2.25lb (1 kg) beef chuck (cubed)
  • 1 onion (peeled and cut in half)
  • 2 parsips (peeled and cut in chunks)
  • 1 carrot (peeled and cut in chunks)
  • 1 leek (cut in chunks)
  • 3 bay leaves
  • 10 white peppercorns
  • 3 cloves
  • 1 cup (2.5 dl) beef or vegetable stock
  • a few pinches of salt

What to do:

1Put everything to a slow cooker and cook on low for 8 hours.


This recipe is to pre-boil beef in order to use it in other recipes, such as e.g. "Dillkött" ("Dill meat") or "Pepparrotskött" (Horseradish meat").


Pepparrotskött (“Horseradish Meat”)

What you need:

  • 1 batch pre-boiled beef
  • 1 cup (2.5 dl) of the stock from the pre-boiled beef
  • 1 cup (2.5 dl) full fat cream
  • 2oz (50 g) butter, clarified butter, or ghee
  • 4.5oz (130 g) cream cheese
  • 0.75 cup (2 dl) coarsely grated horseradish
  • salt (to taste)
  • pepper (to taste)

What to do:

1Add everything but the meat to a pot and simmer on low heat for about 10 minutes.
2Gently stir in the meat and allow it to re-heat before serving.


You could very well also cook the beef in one piece and serve it sliced with the horseradish sauce as gravy…
