
This simple side dish goes perfect with “heavier” meat, such as most game or minced beef dishes (e.g. meatballs/meat loaf etc).
It’s got a freshness to it, got great flavor, a bit of sourness, a bit of sweetness, and an awesome color!
It can be served both warm and cold, and for those of you that are familiar with lingonberry jam, this is a very good replacement for it I think.
• 1 Pear, shredded over the coarse side of a grater.
• 2 Red Onions, halved and thinly sliced.
• 1/2 cup (1 dl) Lingonberries, fresh or (unsweetened) frozen.
• 2 tbsp Olive Oil.
• Crushed Black Pepper, to taste.
Add the pear and lingonberries, and season with black pepper to your preference.
Serve warm or cold.
Enjoy!
NOTE: If you can’t get lingonberries in your area, I would probably have tried substituting it with cranberries…
