Keepin’ it simple… Pt.2

A while back I posted the first “Keepin’ it simple…” post, and think this over time might be a reoccurring topic.
With these posts I want to show that you can eat good, tasty, healthy food made with low effort…so they should mainly be seen as inspiration rather than strict recipes.
Often they use leftovers from food made in other posts and stuff commonly available at home, so they’re easy on the wallet too…

“Keepin’ it simple…pt.2″ is:

Chicken/Veggie Stir Fry with Parmesan

Ingredients:
• Chicken, diced (in this case leftovers from here).
• Vegetables, cut into preferred sizes (in this case: Asparagus, Zucchini, Cherry Tomatoes, Broccoli, Onions and Garlic).
• 1 Lemon, optional.
• Parmesan Cheese, optional.
• Spices, (in this case dried Basil, Salt and crushed Black Pepper).

“Instructions”:
If you use raw chicken, fry it first and put aside (leftovers just needs to be re-heated).
Then start frying the vegetables that that requires the longest cooking time until preferred texture is achieved, and add the others along the way so they’re all done at about the same time.
Add the chicken when the vegetables are almost done, and then spices, zest etc. to taste.
Finnish of by removing the pan from the heat and grate som parmesan cheese over, gently stir/toss a few times and let the cheese partially melt before serving.
Does not need to be harder than that.
