So…here we go, THE FIRST POST!
AND…something has to become the first post, so why not something that I think will dominate the type of posts put on this blog…: Today’s Dinner.
Indian Inspired Chicken Stew
I rarely cook by recipes, but will try to write down an estimate of what it would look like:
Ingredients:
4-5 chicken breasts, cut in bite size pieces.
3 split and sliced onions.
1 red bell pepper, diced.
3-4 minced cloves of garlic.
1 red chili, de-seeded and finely chopped.
1-1.4 oz (30-40 g) of Garam Masala spice mix.
The juice of 2 limes.
1 handful of cashew nuts.
One can of organic coconut milk.
One can of organic crushed tomatoes.
Coconut oil.
One shredded cauliflower.
Add everything for the stew, except for the coconut milk, crushed tomatoes and cashews, to a large hot frying pan and fry in coconut oil until the chicken is done.
Then pour everything over into a pot and add the coconut milk, tomatoes and cashews.
Let simmer on low heat until the cauliflower rice is done.
Bring a pot of water to a boil and add the shredded cauliflower. Let boil for just a minute or so before draining the water.
Serve, eat and enjoy!

Looks great! I had a real hard time writing down recipes when I first started out. Now I’m a pro at eyeballing my ingredients and figuring out their measurements – be sure to take notes while cooking! :)

Oh yes, sure will do ;)
I made this tonight with some modification:
-Whole milk for coconut milk (couldn’t find any good brands of coconut milk at the store)
-real rice instead of cauliflower (cooked in homemade chicken stock instead of water)
-some random farmer’s market hot pepper, not a red chili
It was really good, and I may do it again sometime.
